Baked Plum and Almond Pud

Plums

Makes about 2 cups. Serve with roast duck or chicken, duck pancakes or pulled pork with Asian flavours.

Ingredients:

100 g (1/2 cup) butter, melted
100g (3/4 cup) sugar
100g ground almonds
2 large eggs
6 fresh plums

Method

Preheat oven to 180ºC and grease a 23cm baking dish.

Cream the butter and the sugar. Add eggs and beat well to form a smooth batter.

Halve fruit, remove stone and thickly slice.

Arrange fruit on the base of the baking dish and pour over batter.

Bake for 40-50 minutes until a skewer inserted comes out clean.

Serve with lashings of custard, cream or ice cream.
