Baked Plum and Almond Pudding

Baked Plum and Almond Pudding
• Serves 4
• Medium


• 100g Butter melted
• 100g Sugar
• 100g Almonds ground
• 2 Eggs large
• 6 Plums fresh


1. Preheat oven to 180ºC and grease a 23cm baking dish
2. Cream the butter and the sugar. Add eggs and beat well to form a smooth batter
3. Halve fruit, remove stone and thickly slice
4. Arrange fruit on the base of the baking dish and pour over batter
5. Bake for 40-50 minutes until a skewer inserted comes out clean
6. Serve with lashings of custard, cream or ice cream
