Justin Bonello’s Stone Fruit Slaw

A delicious alternative to cold slaw

Ingredients:
• 1 Tbls Rice vinegar
• 1 glug Olive Oil
• pinch Brown Sugar
• 1 Lime Juice & rind
• to taste Salt
• to taste Black Pepper
• one half Red Onion chopped
• 1 Red Chilli de-seeded and finely chopped
• 1 piece Fresh Ginger peeled and grated
• 2 Spring onions finely sliced
• 3 Peaches pitted and in strips
• 3 Plums pitted and in strips
• Mint finely chopped
• Coriander leaves finely chopped
• 1 glug Olive Oil

Method
1. To make a vinaigrette for the slaw, mix together all the ingredients except the fruit, mint and coriander in a salad bowl
2. Finish by tossing the fruit in the dressing to coat and serve topped with fresh mint and coriander
