Peach Sour

Jenny Morris, Peaches

  • Serves 2

Ingredients

  • 2 large dessert peaches
  • 2 Tbsp caster sugar
  • 100ml white rum
  • 25 ml freshly squeezed lemon juice,
  • ยฝ small egg white
  • Sparkling water to top up, if needed

Method

  1. Cut the peaches into blocks and add it to a blender with the caster sugar.
  2. Add the rum, lemon juice and egg white and blend till frothy.
  3. Place crushed ice into a glass with diced red plum.

Garnish

  1. Crushed ice
  2. 1 red plum finely diced
  3. Slice of plum to garnish the top of the glass
  4. Sliced lime
  5. Straw
  6. Fresh mint
  7. Crushed ice
