Porky Plum Balls

Ingredients

  • 800g pork sausages
  • Salt and pepper to taste
  • 1 clove crushed garlic
  • 2 spring onions finely chopped
  • 1 cup finely chopped plums
  • 1/2 paprika
  • 2 tsp fresh thyme leaves
  • 1/2 tsp sweet paprika
  • 1 tsp ground cumin

Method

  1. Remove the meat from the sausage and place it into a bowl with the remaining ingredients and stir well together to combine.
  2. Divide the mixture into 12 balls, roll each ball into flour, then egg and lastly into the crumbs.
  3. Chill them in the fridge for 30 minutes before deep frying  them in batches till golden brown.
  4. Drain on kitchen paper

Crumbing

  1. 1/2 cup of flour
  2. 2 eggs beaten with 30 ml water
  3. 1 cup panko crumbs
