Peachy White Chocolate Tray Bake
A wonderful lunch box filler or after school treat.

Ingredients:

2 extra large eggs

1 cup brown sugar

1 tsps vanilla extract

2 cups cake flour sifte

2 tsps baking powder
-
1 tsp ground cardamom
-
¼ tsp salt

80 g butter melted
-
250 ml milk
-
100 g white chocolate chopped into small pieces

3 cling peaches stoned and chopped
Topping
-
30 g toasted flaked almond
-
80 g melted white chocolate
Method
- Preheat the oven to 180 °C deg.
- Place the eggs and sugar into the bowl of a food processor whisk together until thick and pale, add the vanilla extract.
- Add the flour, baking powder, cardamom and salt, add melted butter and milk and fold together, don’t over mix.
- Stir in the chopped white chocolate and peaches.
- Spoon the batter into a greased 23 cm baking tray lined with baking paper.
- Bake at 180 ℃ deg C for 35 minutes or until well risen and a skewer inserted into the centre of the cake comes out clean.
- Cool the cake in the tin, scatter with the almonds and drizzle liberally with the melted white chocolate, cut into 16 squares and serve with extra slices of fresh peaches.
