Peachy White Chocolate Tray Bake

A wonderful lunch box filler or after school treat.
Children Recipe

Ingredients:

  • 2 extra large eggs 

  • 1 cup brown sugar

  • 1 tsps vanilla extract

  • 2 cups cake flour sifte

  • 2 tsps baking powder

  • 1 tsp ground cardamom

  • ¼ tsp salt

  • 80 g butter melted

  • 250 ml milk

  • 100 g white chocolate chopped into small pieces

  • 3 cling peaches stoned and chopped

    Topping

  • 30 g toasted flaked almond

  • 80 g melted white chocolate

Method

  1. Preheat the oven to 180 °C deg.
  2. Place the eggs and sugar into the bowl of a food processor whisk together until thick and pale, add the vanilla extract.
  3. Add the flour, baking powder, cardamom and salt, add melted butter and milk and fold together, don’t over mix.
  4. Stir in the chopped white chocolate and peaches.
  5. Spoon the batter into a greased 23 cm baking tray lined with baking paper.
  6. Bake at 180 ℃ deg C for 35 minutes or until well risen and a skewer inserted into the centre of the cake comes out clean.
  7. Cool the cake in the tin, scatter with the almonds and drizzle liberally with the melted white chocolate, cut into 16 squares and serve with extra slices of fresh peaches.
