Spiced Stone Fruit Crumble
Who needs apples?

Ingredients
Crumble
- ½ cup (125ml) cake flour
- ¼ cup (60 ml) pecan or hazelnuts, toasted and chopped
- 1 cup (250ml) rolled oats
- ¼ cup (60 ml) Muscovado or brown sugar
- ¼ cup (60 ml) desiccated coconut
- ¼ cup (60ml) butter, softened + extra for greasing and topping
Fruit
- 4 nectarines, cut into 2 cm thick slices
- 4 plums, cut into 2 cm thick slices
- Juice of 1 large orange
- 1 Tbsp (15ml) mixed spice
- 1 tsp (5ml) ground cinnamon
Method
- Preheat oven to 190ᴼC.
- Mix together cake flour, pecans, oats, sugar, desiccated coconut, and butter in a large bowl until crumbly.
- Mix nectarine and plum slices, lemon juice, mixed spice and cinnamon.
- Prepare a greased baking dish and spoon in fruit
- Top with crumble mixture and dot with butter.
- Bake in the oven for 30-45 minutes until golden colour.
- Serve warm with custard, ice cream or yoghurt.
