Spiced Stone Fruit Crumble

Who needs apples?

  • Serves 4

Ingredients

Crumble

  • ½ cup (125ml) cake flour
  • ¼ cup (60 ml) pecan or hazelnuts, toasted and chopped
  • 1 cup (250ml) rolled oats
  • ¼ cup (60 ml) Muscovado or brown sugar
  • ¼ cup (60 ml) desiccated coconut
  • ¼ cup (60ml) butter, softened + extra for greasing and topping

Fruit

  • 4 nectarines, cut into 2 cm thick slices
  • 4 plums, cut into 2 cm thick slices
  • Juice of 1 large orange
  • 1 Tbsp (15ml) mixed spice
  • 1 tsp (5ml) ground cinnamon

Method

  1. Preheat oven to 190ᴼC.
  2. Mix together cake flour, pecans, oats, sugar, desiccated coconut, and butter in a large bowl until crumbly.
  3. Mix nectarine and plum slices, lemon juice, mixed spice and cinnamon.
  4. Prepare a greased baking dish and spoon in fruit
  5. Top with crumble mixture and dot with butter.
  6. Bake in the oven for 30-45 minutes until golden colour.
  7. Serve warm with custard, ice cream or yoghurt.
