Peachy Muffins

  • 2 cups oats
  • 1Β½ tsp baking powder
  • 1 tsp mixed spice
  • 3 eggs
  • 2 small ripe bananas mashed
  • ΒΌ cup melted butter
  • 1 tsp vanilla extract
  • ΒΌ cup golden syrup
  • 2 cups finely chopped peaches


  1. Preheat the oven to 180 deg C

  2. Spray a 12hole muffin tin with non-stick spray.

  3. Place all the ingredients except the peaches into a bowl and mix together well.

  4. Stir in the peaches.

  5. Spoon the batter into the prepared muffin tin and bake for 25 to 30 minutes or until a skewer inserted into the centre of each muffin comes out clean

  6. Cool for 10 minutes in the pan and then remove to cool completely on a wire rack.

  7. Sprinkle with chopped freeze-dried raspberries.
